I always thought the Canon 5D classic was a nice sensor.
The fuji miorrorless camera's have great jpeg processing abilities. Even if you just apply the profiles in LR.
I'll go out on a limb, and say lens matters more than sensor. Put a early film lens on a mirrorless and it's going to look more like film than the same camera with a modern l designed lens.
